Of all the variables in espresso preparation, tamping consistency is one of the most controllable — and one of the most commonly done incorrectly. An uneven or insufficient tamp creates ‘channels’ in the coffee puck through which pressurised water finds the path of least resistance, resulting in uneven extraction, sourness, and wasted potential in your beans.
The Pullman BigStep Tamper was engineered to solve this problem. Designed by Australian coffee equipment specialist Pullman, the BigStep’s signature stepped base design provides a physical reference guide that promotes level tamping without requiring the user to manually judge angle or depth.

The Science of Tamping
A well-tamped espresso puck should present a flat, even surface to the incoming pressurised water. If one side is lower than another, water naturally flows through the lower-resistance path — the definition of channelling.
